Braised Potato Salad with White Beans

This hearty and flavorful potato salad is a delightful twist on the classic. The braised potatoes add a unique texture and the white beans provide extra protein, making it a perfect side dish or even a light meal.

Ingredients:

  • 4 medium-sized potatoes, diced

  • 1 can 15 oz white beans, drained and rinsed

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons red wine vinegar

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

Instructions:

Warm up the olive oil in a big pan over medium-low heat


It will take about 15 minutes of cooking after adding the diced potatoes until they are golden brown and soft


Add the minced garlic and dried rosemary, then cook for two more minutes until the food smells good


Take it off the heat and add salt and pepper to your liking


Put the white beans, fresh parsley, cherry tomatoes, red onion, and braised potatoes in a large bowl


Add red wine vinegar to the salad and toss it to mix all the ingredients together


Put the salad in the fridge for at least 30 minutes before you serve it


Add more fresh parsley as a garnish before serving
