This tomato basil soup is creamy and tastes great with the flavors of ripe tomatoes and fresh basil. Great for a warm meal on a cold day. Ingredients:
Instructions:In a large pot, heat olive oil over medium heat Add chopped onion and minced garlic, cook until softened, about 5 minutes Add whole peeled tomatoes with their juices and break them apart using a wooden spoon Stir in vegetable broth and chopped basil leaves Simmer for 15-20 minutes Using an immersion blender, blend the soup until smooth Stir in heavy cream and season with salt and pepper to taste Simmer for an additional 5 minutes Serve hot, garnished with additional basil leaves if desired
