Grilled Bell Pepper Salad

Because the peppers were grilled, this Grilled Bell Pepper Salad is full of smokey flavors. The balsamic-honey dressing adds sweetness. It's a colorful and tasty salad that's great for summer.

Ingredients:

  • 3 bell peppers red, yellow, and green

  • 1 small red onion, thinly sliced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 cups mixed greens e

  • , arugula, spinach, or lettuce

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 1/4 cup chopped fresh basil leaves

Instructions:

Preheat your grill to medium-high heat


Cut the bell peppers in half and remove the seeds and membranes


Brush the pepper halves with olive oil and season with salt and pepper


Place the bell peppers on the grill, skin side down, and grill for about 5-7 minutes until they have grill marks and are slightly softened


Remove the grilled peppers from the heat and let them cool for a few minutes


Once cooled, slice the grilled bell peppers into thin strips


In a large bowl, combine the sliced grilled bell peppers, sliced red onion, and mixed greens


In a small bowl, whisk together the balsamic vinegar and honey to make the dressing


Drizzle the dressing over the salad and toss to combine


Sprinkle the crumbled feta cheese and chopped basil over the salad


Serve immediately and enjoy your Grilled Bell Pepper Salad!
