Lentil and Andouille Soup

The earthy richness of lentils and the spicy smoke of Andouille sausage come together in this hearty and tasty soup.

Ingredients:

  • 1 cup dried green lentils

  • 1 andouille sausage, sliced

  • 1 onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 6 cups chicken broth

  • 1 can 14 oz diced tomatoes

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Instructions:

In a large pot, heat olive oil over medium heat


Add sliced andouille sausage and saut until browned


Add diced onion, carrots, celery, and minced garlic


Cook until vegetables are softened


Pour in chicken broth, add dried lentils, diced tomatoes, thyme, and smoked paprika


Season with salt and pepper to taste


Bring to a boil


Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender


Adjust seasoning if needed and serve hot
