Spring Asparagus Salad

This Spring Asparagus Salad is a refreshing and vibrant vegetarian dish that's perfect for filling you up during the spring season. Fresh asparagus, sweet cherry tomatoes, and tangy feta cheese come together with a zesty balsamic dressing to create a delightful combination of flavors and textures.

Ingredients:

  • 1 bunch fresh asparagus

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red onion, thinly sliced

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup toasted pine nuts

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper, to taste

  • Fresh basil leaves for garnish

Instructions:

Cut off the tough ends of the asparagus and blanch them for two to three minutes


Then, drop them into ice water to stop the cooking


Remove the water and set it aside


Put the asparagus that has been blanched, cherry tomatoes, red onion, and crumbled feta cheese in a large salad bowl


To make the dressing, mix the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl with a whisk


Pour the dressing over the salad and gently toss everything together


For extra crunch, sprinkle toasted pine nuts on top and top with fresh basil leaves


Have the Spring Asparagus Salad right away and enjoy it!
